Kids’ Paleo Pancakes

Friday Fun cooking has begun! I’m cooking lead for my daughter’s and son’s K/1 classes. With the late start to the school year, we’ve only had one cooking session in my son’s class so far, but it was a blast! I LOVE cooking with the kinders and 1st graders. Yes – it can be total chaos at times. But watching them roll up their sleeves, digging in to whatever peeling, chopping, cracking, mashing has to be done, and trying (and enjoying!) new flavors – is such an amazing experience.

What was our first cooking project? Kids’ Paleo Pancakes! A super fun and easy take on the 2 egg/1 banana paleo pancakes that many of you may already know. Bodi wants to make “banana pancakes” all the time now!

Kids’ Paleo Pancakes

Ingredients:
1/2 ripe banana
1 egg
Fixins:

  • Enjoy life mini chocolate chips
  • Shredded coconut
  • Flaxseeds
  • Sunflower seeds
  • Whatever else your heart desires!

Honey or Maple syrup
Olive oil or other cooking spray

Directions:

  1. Cut bananas in half
  2. Have kids peel their 1/2 banana and mash really well in a bowl
  3. Crack egg into the bowl and mix into mashed banana
  4. Mix in fixins’ as desired
  5. Cook on a griddle
  6. Serve with honey or maple syrup and enjoy!

  1. Completely aside from nutritional concerns, another big issue with kids is the age-old problem of getting them to eat their vegetables in the first place. And what about food they get at school? Food they get at their friends’ houses? Nobody wants their kid to be known as the weirdo Paleo kid who’s never any fun because she can’t have candy.

  2. Taking the whole family on the Paleo journey can be daunting. Kids can be picky eaters to begin with, and when you take away typical kid foods like macaroni and cheese, things could get ugly. Give these kid-friendly recipes a try to keep your kids both happy and healthy. Besides the alliteration in the name of this recipe, I love the general concept. Kids really love these freezer pops, but the store-bought ones are no more than high-fructose corn syrup, dyes, and artificial flavor. Let s make some healthy ones in our favorite flavors!
